Blackened Fish Bowls with Green Goddess Sauce


April lee (@thetipsyhousewife), a fellow Chicago food blogger (and nanny), created this ladies only Instagram recipe contest called greens, beans, and proteins.. Sounds simple right... The only catch is that you can only use 10 ingredients. Not so easy now? I created this dish from all my favorite things. Lately I’ve been really into hash and "bowls". I really love looking into my fridge or pantry and seeing what proteins, grains, and veggies I have leftover from the week, and then turning them into something delicious! Anyone that knows me (or follows me on Instagram) knows how much I love fish tacos. I'm super happy with how this recipe turned out and I hope you enjoy it as much as I do!


· 1 cup rice

· 1/2 cup cilantro, chopped

· zest and Juice of 1 lime

· 4 clove garlic

· 2 medium pieces white fish, like cod or tilapia

· ¼ cup blackened seasoning

· 1 can black beans

· 1 avocado

· ¼ cup sour cream

· 1 cup shredded cabbage

· salt and pepper

· olive oil

· water

  1. Prepare the rice as directed on package, I used white rice but you can use whatever variety you prefer. Once the rice is cooked, add lime zest and juice, 1/4 cup of cilantro, and 1 clove of garlic minced. Set aside.  

  2. To make the green goddess dressing combine 1/4 cup of sour cream, 1/4 cup cilantro, 1 avocado, 1/4 cup of olive oil, 3 cloves of garlic, 1/4 cup lime juice in a food processor or blender. Pulse until smooth and season with salt and pepper to taste. The sauce will be slightly thick at this point but you can slowly add water until you reach your desired consistency. 

  3. For the cabbage slaw, thinly slice about half of a head of small cabbage (should be around 1 cup). Toss the sliced cabbage in 1/2 cup of the green goddess dressing. set aside. 

  4. Coat the fish with a couple tablespoons of olive oil and cover with blackened seasoning. I used Zatarain's but you can use any variety you like! Heat 2 tablespoons of olive oil in a skillet over medium heat and cook fish until it begins to crisp on each side.

  5. Heat the beans in a saucepan with a little water until they are hot and starting to split.

  1. To build the bowl, start with a few scoops of rice, and then add a layer of beans on top. Next add a spoonful of the cabbage slaw and then the fish! Drizzle the green goddess dressing on the top and enjoy!

  2. Because this “contest” only allowed 10 ingredients, I obviously had to limit the topping of this particular bowl. This type of “bowl” is something that I make and eat on a regular basis and usually make them with whatever meats and veggies I have leftover in the fridge at the time! Corn, avocado, peppers, or even mango would all be super delicious additions to this bowl! Be creative and if you have other veggies in your fridge, don’t be afraid to experiment!
