Chocolate Zucchini Spice Cake

with Cinnamon Cream Cheese Frosting

This cake was one of my favorite things my grandma would make when I was younger! Every fall I remember walking into my grandmas kitchen and being greeted with all the amazing smells of chocolate, cinnamon, and nutmeg. It literally tastes like fall with every bite! It's the perfect treat to bake if your having some friends over or if you're headed to a fall potluck or gathering! I love eating this cake and I hope you do to!

 2 1/2 cups All Purpose Flour

 1/2 cup Cocoa Powder

2 1/2 tsp. Baking Powder

 1 1/2 tsp. Baking Soda

1 tsp. Salt

 3/4 cup (12 TBSP)  Butter, softened

2 cups Sugar

2 tsp. Cinnamon

3/4 tsp. Nutmeg

3 eggs

2  cups grated zucchini

2 tsp Vanilla Extract

1/2 cup milk

Preheat oven to 350° F. Mix flour, cocoa powder, baking powder, baking soda, and salt. Set aside. Using either a stand mixer or hand mixer cream butter, sugar, cinnamon, and nutmeg. Mix until a light fluffy mixture forms. Add eggs one at a time, mixing well after each addition. Add zucchini and vanilla. Mix until combined.  Finally, alternately add dry ingredients with milk. Bake in a greased, lightly floured 9 x 13 pan for 30-40 minutes or until a toothpick comes cleanly out of the center of the cake!

For the frosting

3 oz Cream Cheese

1/3 cup Butter, softened

3/4 tsp. Cinnamon

4 cups Powdered Sugar

1 tsp. Vanilla Extract

2 T Milk

Using a stand mixer or hand mixer, mix the cream cheese, butter, and cinnamon until the they are all smooth and combined well. Add powdered sugar 1 cup at a time mixing well after each addition. Stir in vanilla and gradually add milk.
